A good pasta salad is perfect for warm weather. Spring in Puerto Rico means that summer started and will end in December đ. This easy recipe can be made ahead and will taste better every day. I used a little bit of honey to cut the vinegar acidity. This recipe has many ways to vary, but this one is pretty classic.
Dressing
1 tbsp. chopped fresh parsley
2 tsp. Italian seasoning
1/3 c. extra-virgin olive oil
2 tbsp. red wine vinegar
1 tsp of honey
Pinch of crushed red pepper flakes
Kosher salt
Freshly ground black pepper
Combine oil, garlic, vinegar, parsley, honey, italian seasoning, and red pepper flakes in a jar. Secure with a lid, then shake to combine; season with salt and black pepper.
Salad
1 pound of cooked rotini or fusilli pasta
1 cup mozzarella pearls, if you don’t find pearls use the small balls and cut them in half
1 cup chopped salami
1 clove garlic, finely chopped
3/4 cup artichoke hearts, chopped 3/4 cup roasted red peppers, chopped
3/4 cup cherry tomatoes, halved
1/2 cup pitted black olives, sliced
Toss pasta, mozzarella, salami, artichokes, tomatoes, and olives in a large bowl. Pour dressing over pasta salad and mix to combine.
