A good pasta salad is perfect for warm weather. Spring in Puerto Rico means that summer started and will end in December 😂. This easy recipe can be made ahead and will taste better every day. I used a little bit of honey to cut the vinegar acidity. This recipe has many ways to vary, but this one is pretty classic.
Dressing
1 tbsp. chopped fresh parsley
2 tsp. Italian seasoning
1/3 c. extra-virgin olive oil
2 tbsp. red wine vinegar
1 tsp of honey
Pinch of crushed red pepper flakes
Kosher salt
Freshly ground black pepper
Combine oil, garlic, vinegar, parsley, honey, italian seasoning, and red pepper flakes in a jar. Secure with a lid, then shake to combine; season with salt and black pepper.
Salad
1 pound of cooked rotini or fusilli pasta
1 cup mozzarella pearls, if you don’t find pearls use the small balls and cut them in half
1 cup chopped salami
1 clove garlic, finely chopped
3/4 cup artichoke hearts, chopped 3/4 cup roasted red peppers, chopped
3/4 cup cherry tomatoes, halved
1/2 cup pitted black olives, sliced
Toss pasta, mozzarella, salami, artichokes, tomatoes, and olives in a large bowl. Pour dressing over pasta salad and mix to combine.
