French omelettes always remind me that the best dishes are the simplest — 4 ingredients, a gentle hand, and a little patience. 🧈✨
Eggs, butter, salt, and pepper. That’s it.
Mix the eggs with salt, pepper, and your optional ingredient (chives, scallions, parsley, tarragon… you choose). Mix well.
In a nonstick pan over medium-low, add butter and let it get bubbly — not brown! When it’s ready, pour in the eggs.
Start stirring… and keep stirring. This is where the secret ingredient kicks in: patience. 😌✨
Lift the pan off the heat here and there so it cooks gently. When the eggs reach that soft, creamy stage — somewhere between scrambled and omelet — turn off the heat.
If you’re adding cheese, please let it be Gruyère. 🧀💫
Gently roll it, plate it, and finish with a rub of butter on top and a touch of black pepper.
Serve with a simple side salad. 🥗
