These tacos are simple to prepare and delicious. You can mix and match your favorite proteins and flavors to create them just the way you like. They are perfect for a flavorful Mexican weeknight dinner or a quick lunch or appetizer by the pool with some margaritas, making them ideal for Cinco de Mayo. I made mine with pre-marinated chicken, added onions and peppers, and topped them with cheese and a cilantro lime crema. I made a homemade Cilantro Lime Crema, but I noticed that Costco sells a ready-made version, so choose your favorite.
🌮Here’s what you’ll need:
- Boneless chicken thighs (seasoned with salt, pepper, garlic powder, onion powder, and oregano).
- Sliced sweet bell peppers and onions (feel free to throw in jalapeños or serranos if you like some heat!)
- Salt, pepper, dried oregano, paprika and a dash of ground cinnamon
- Flour tortillas
- Olive oil
- Sour cream
- Fresh cilantro
- Lime
- Grated cheese like a combination of cheddar or Mexican blend
- Sheet pan
- Parchment paper
🌮Let’s get cooking!
- Start by prepping your sheet pan with some parchment paper.
- Cook your chicken and veggies, seasoning the veggies with salt and pepper to taste. Sear the chicken on both sides. Mix everything and sprinkle in about 1/4 teaspoon of paprika and a pinch of cinnamon. Cook until the chicken is tender, then taste it to adjust the seasoning as needed.
- While that’s happening, preheat your oven to 400°F and let’s make that crema! In a blender, combine 1 cup of sour cream, a handful of roughly chopped cilantro, the juice of half a lime, and 1/2 teaspoon of kosher salt. Blend until smooth and creamy.
- Now, brush both sides of your tortillas with olive oil. Load them up with the chicken and some cheese, fold them closed, and add a bit more cheese on top.
- Pop those tacos in the oven and bake for about 12-14 minutes, or until they’re golden and the cheese is nice and bubbly. Serve with the cilantro crema drizzled on top, some fresh cilantro, and a wedge of lime. You can have some pico de gallo and guacamole for dipping.
