✨Cypriot Potato Salad

Experience Mediterranean flavors with this simple potato salad featuring fresh herbs and lemon. It’s delicious and makes a perfect, refreshing side dish.

✨Variations: Add chopped Kalamata and/or capers if you like olives.

You will need:

– 1 1/2 pounds of baby potatoes

– 4 finely chopped scallions

– 1/4 cup chopped fresh parsley

– 1/4 cup chopped fresh coriander

– 1 tablespoon dried oregano

– Juice from 1 lemon

– 1 teaspoon lemon zest

– About 1/4 cup extra virgin olive oil

– Salt and black pepper to taste

Directions:

1. Boil the potatoes in salted water until they are tender but still hold their shape. Drain the potatoes and set them aside until they are cool enough to handle.

2. In a large bowl, combine all the ingredients and gently toss them until well mixed.

3. Taste the salad and adjust the seasoning with additional salt and pepper if needed.

4. Let the salad chill for at least 15 minutes before serving.
