Pecans and caramel are always a good idea, but adding pumpkin spice to the pecan squares recipe makes it even better! A dollop of vanilla ice cream was the only thing missing!
Tip: Have all the ingredients ready before starting, and carefully read the recipe. This always helps me when I bake desserts.
🍁 Crust ingredients
- 2 sticks cold unsalted butter, cut into pieces
- 2 ½ cups all-purpose flour
- ⅓ cup granulated sugar
- ½ teaspoon kosher salt
- 1 egg yolk
- Ice water, if necessary
🍁 Topping Ingredients
- 2 sticks unsalted butter
- 1 ½ cups light brown sugar
- ¼ cup honey
- 1 ½ teaspoons kosher salt
- ½ cup heavy cream
- 2 teaspoons vanilla extract
- 4 cups pecans, coarsely chopped
You will get 24 squares from this recipe.
1. Preheat the oven to 350 degrees.
2. Butter a 13×9-inch pan and line it with parchment paper, leaving an overhang. Now, also butter the parchment paper.
3. In a food processor, combine the flour, sugar, salt, and pulse. Add the butter and pulse until the mixture looks like coarse sand. Add the egg yolk and pulse. Add 1 tablespoon of icy water if necessary, but don’t let the mixture get too wet; it should be sandy.
4. Place the dough into the prepared pan. Use your hands and press the crumbs and a little bit to the sides to create a border. Press until you get an even thickness. Bake until light golden brown for about 40-45 minutes. When ready, transfer to a rack and set aside while you prepare the topping.
For the topping:
1. Reduce the oven temperature to 325 degrees.
2. Melt the unsalted butter in a medium saucepan and add sugar, pumpkin spice, salt, and honey. Bring to a simmer over medium-high heat and whisk consistently for about 3-4 minutes until you get a light caramel texture.
3. Remove from the heat and add heavy cream, vanilla, and pecans. Mix well. Spread the caramel mixture evenly on top of the crust, careful not to reach the border completely.
4. Bake for about 20-25 minutes. As it cools, the caramel will continue to firm up.
5. Transfer the pan to a rack and let it cool completely before cutting.
