Nectarine & Prosciutto Salad

It is an elegant, light, refreshing salad that pairs perfectly with seafood or meat. Take advantage of the stone fruit season. You can also use peaches🍑. The recipe is as follows:

🍃Ingredients:

– 1 big or 2 small nectarines or peaches

– Prosciutto

– Freshly grated Manchego cheese

– 1 tsp of capers

🍃For the vinaigrette:

– 1/4 cup extra virgin olive oil

– 2 tablespoons apple cider vinegar

– 2 teaspoons Dijon mustard

– 2 tablespoons honey

– Red pepper flakes and salt to taste

Directions:

1. Mix all vinaigrette ingredients well and set aside until ready to serve.

2. Thinly slice the nectarines and plate them on the serving tray with the prosciutto.

3. Decorate the plate with arugula, vinaigrette, capers, and fresh Manchego.

4. You can prepare the salad in advance and add the arugula and toppings just before serving.
