I made a box of Chocolate Cake with Fresh Mint, resulting in an easy, delicate, and delicious cake. The fresh mint introduced a subtle flavor that wasn’t overpowering like artificial mint. If you’re a fan of mint chocolate, you’ll like this recipe!
You’ll need a box of your favorite chocolate cake mix. To enhance the flavor of the box cake, replace water with milk and vegetable oil with butter. In this instance, I made mint-infused butter. The instructions are provided below.
My box cake mix called for 1/2 cup of oil, equivalent to 1 stick of butter. Follow all the instructions for the batter. If your mix doesn’t include vanilla, add 1/2 teaspoon of vanilla.
For the mint-infused butter:
– 1 stick of unsalted butter
– 3/4 cup of chopped fresh mint
Place the butter and mint in a small saucepan over medium heat. Melt the butter and stir occasionally for about 3 minutes. Turn off the heat and let the butter sit for 30 minutes.
Strain the butter, pressing the leaves to extract all the butter and flavor from the mint.
Follow your box’s cooking instructions. Don’t overcook!
I finish the cake with a chocolate glaze. You can also sprinkle finely chopped chocolate mint on top.
For the glaze:
– 4 oz semisweet or bittersweet chocolate chips
– 1/2 cup heavy cream
Place the chocolate in a heatproof bowl. Heat the heavy cream in the microwave for 10-second intervals until the cream is hot.
Add the cream to the chocolate bowl and mix well.
Let the cake cool before adding the glaze. Enjoy! 💫
